Preparations for the celebrations of Eid Alfosah  عيد الفصح next Sunday... (Western Sydney) Preparations for the celebrations of Eid Alfosah #عيد الفصح next Sunday with some home made #Maamoul #معمول, a sweetened, rose water scented, semolina based short bread biscuit filled with either dates, pistachio, cashew or walnuts. In April of each year throughout my childhood in the mountains, Ouma would have my brother Hamid and I hull the dried walnuts she needed for this dessert. We'd have them collected by the end of summer by laying sheets down on the grass underneath the tree and using sticks to rustle the branches just enough for the dried walnuts to fall to the ground. We'd use rocks to break the hard shell open, eat half the nuts, then bring the rest back over to Oum for her to soak in the rosewater she'd made earlier that morning before engaging in the process of Ma'amoul making. I remember Ouma singing in the kitchen 🎵 هيهات يبو الزلوف 🎵 a song by #Sabah #صباح was her absolute favourite and I find myself drawn back constantly to these sounds of sweet nostalgia each time I bake, in honour of my dear mother and the legacy she has left for us 🌹
