There are a few different variations of this delicious vegan dish and today I’m sharing with you my favourite one, #مجدرة with beans and #burghul #برغل (cracked wheat). As you know, dried beans need to be soaked for a few hours or overnight before cooking to remove some of the indigestible complex sugars that cause gas and to, somewhat, reduce the cooking time. My Ouma used to cook beans on the wooden fire in our back yard and so did the rest of the village women. One day Ouma asked me to go outside and “shock the pot” with the beans cooking inside it. For a 9 year old I’ve never been more confused in my life. “How do I shock the pot” Ouma read in my puzzled expression as I stood their looking at her. “Take a small bottle of cold water and add it to the pot. That way the beans will get shocked and sink to the bottom and cook much faster” was her response. I went off and shocked the pot, all the while, imagining myself sneaking up to the pot and going BOOOOO 😂😘
