Eggs were plentiful in our village, North of Lebanon, where we grew up.... Eggs were plentiful in our village, North of Lebanon, where we grew up. One could see chickens roaming around freely in most neighbours backyards. My grandmother loved her chickens and we loved grandma's chickens because we used to play hide and seek with them. The chickens were, forever, trying to find hidden spots to lay their eggs so that we kids couldn't find them. Little did they know that the song they sang, straight after they laid the eggs, led us directly to their hiding spot. To make a meal of Ijjeh #عجة for a whole family, we needed at least 12 eggs. Sometimes we would collect the eggs over two or three days for Ouma to make these delicious fritters but ohhhh......the wait was so worth it. Today, as I was frying the Ijjeh, I could almost hear my grandmother's voice, just before dark, calling out "Enn Enn" to her chickens, which meant "Pen Pen" and I could see the chickens running to safety to get into their pens for the night before the foxes started roaming the village.
