Rima flattens and expands the dough below her. With every new piece of dough comes the same steady beat. Rima has been making markouk bread since she was a child. Markouk bread is a thin, flat disc of bread which is baked upon a traditional dome-shaped oven called a saj. The bread is very common throughout Lebanon and is eaten by being filled and then rolled into a sandwich or by being ripped and used to pinch and grab food.
