A breakfast dish regularly enjoyed throughout my childhood in Lebanon,... A breakfast dish regularly enjoyed throughout my childhood in Lebanon, that I still treat myself to this day, is #FoulMudammas فول مدمس a dish made of cooked fava beans, garlic, cumin, lemon and olive oil topped with tomato and parsley. On the rare occasion Oummi and I would travel to Tripoli from our village, squished in her lap and sandwiched between six people via an overcrowded 'servis' ride for the longest forty minutes of my tiny life, I'd keep in mind the warm fragrance of a fresh plate of Foul I knew Oummi would buy for me in Souk al Deheb from Abu Riyad. My mother was my teacher and an actual master chef though I promise you Abu Riyad knew his Foul Mudammas and I spent the early hours of my morning today cooking to find peace, trying to channel his moorish version of this nourishing dish.
