My mother taught me to try not to let any food go to waste. I made these omelettes with her in mind when I added the insides of the zucchinis after I hollowed them. I opted for baking instead of frying the #عجة omelettes. The insides of the zucchinis added to the flavour and left each piece deliciously moist.
